Reel in the Tuna Burger

Tuna burgers are a student’s answer to cheap and quick cuisine. This recipe takes mere minutes to put together and can be substituted for a traditional beef hamburger. Tuck this into a soft pita for a great lunch-on-the-go or serve on top of tossed greens for a healthy dinner.

For extra Asian flavour, add some chopped cilantro into the mix.

1 can tuna
1 egg, slightly beaten
1/2 cup Miracle Whip or mayo
1/2 cup red bell pepper, finely diced
1/3 cup green onions, finely sliced
1 tbsp stir-fry sauce or 1 tsp soy sauce
1 1/4 cup breadcrumbs
1 tsp vegetable oil

Drain tuna well. In a medium mixing bowl, flake drained tuna with fork.
Mix egg, Miracle Whip, pepper, green onions, and stir-fry sauce into the tuna. Stir all ingrendients together. Sprinkle breadcrumbs into tuna mixture and continue to stir.

Firmly press together the tuna mixture and form into three patties. Add vegetable oil to a nonstick skillet.
When oil is hot, cook patties until brown on both sides and heated through.
Serve burgers in a whole-grain pita pocket or on top of a bed of mixed greens.
